Ingredients (2 servings)
- 2 medium fresh beetroots (peeled & chopped)
- 1 carrot (optional, for sweetness)
- 1 small apple (optional)
- Juice of ½ lemon
- ½ inch fresh ginger
- 1–1½ cups cold water (or coconut water)
- Ice cubes (optional)
- Fresh mint leaves (optional garnish)
Instructions
- Wash, peel, and chop the beetroot into small cubes.
- Add beetroot, carrot, apple, ginger, and water into a blender.
- Blend until smooth.
- Strain through a fine sieve or cheesecloth (optional — you can keep the fiber if preferred).
- Stir in fresh lemon juice.
- Pour into a glass, add ice, and garnish with mint.
